- This is the laboratory manual for A Highly Caffeinated Introduction to Chemical Engineering, the new textbook for first-year college students majoring in chemical engineering. It provides a rigorous, calculus-based introduction to chemical engineering as illustrated by the roasting and brewing of coffee. Hands-on coffee experiments demonstrate key engineering principles, including material balances, chemical kinetics, mass transfer, fluid mechanics, conservation of energy, and colloidal phenomena. Each laboratory experiment is designed to teach a core quantitative skill, including dimensional analysis, unit conversions, spreadsheet data analysis, numerical differentiation, numerical integration, manipulation of logarithms and exponentials, and communication of scientific data. The experiments lead to an engineering design competition where contestants strive to make the best tasting coffee using the least amount of energy – a classic engineering optimization problem, but one that is both fun and tasty! This lab manual is intended to be used in tandem with the textbook (not included here), which is scheduled to be published in 2026. Readers interested in a non-calculus version of this material are encouraged to instead consider The Design of Coffee: An Engineering Approach (4th ed.), which uses the same coffee-based experimentation but without the emphasis on applications of calculus.
